Mustard & Maple Cutlets

Simply cut a pork rack into individual cutlets.

Ingredients
Marinade
1 tablespoon wholegrain mustard
1/4 cup maple syrup
1 teaspoon ground cumin
1 teaspoon coriander
2 pork racks cut into cutlets
Method
1.Mix the marinade together and brush over the cutlets. Cover and leave in the refrigerator for 30 minutes.
2.Pre-heat the grill or a pan.
3.Remove the cutlets from the marinade and grill or panfry 6 minutes, turn, grill/panfry 6-8 minutes or until cutlets are tender.
