Italian Pork Relish Loaf

This recipe also works well with an Indian mango chutney and the addition of 1 tablespoon each cumin seeds and curry powder.

Ingredients
500g 100% New Zealand Trim Pork Mince
2 slices wholegrain toast bread
1/2 cup tomato relish or chutney
2 medium tomatoes, diced
100g pitted olives
2 tablespoons freshly chopped herbs
2 tablespoons tomato relish or chutney

Method
1.Preheat oven to 180°C.
2.Place all ingredients except last two tablespoons tomato relish in a food processor and pulse until all ingredients well mixed.
3.Line a loaf tin with baking paper and fill with the pork mixture.
4.Spread remaining relish on top and bake at 180°C for 30 minutes.

To serve
Allow to cool then slice and serve with an Italian pasta salad, cherry tomatoes and a green salad or serve between two hunks of seriously chunky wholemeal bread.
