Alissa's Stuffed Roast Pork Rump

Serves 6-8

Ingredients
2 x 1kg pork rumps (halve quantities below if using only 1)

Rub
1/4 C olive oil
2 tbls English mustard
1/4 C fresh rosemary, chopped
Salt and pepper

Stuffing
15 - 20 wilted spinach leaves (wilt in the microwave or pour boiling water over)
3 slices bacon
I onion finely chopped
8 fresh sage leaves
1 apple peeled and finely sliced
salt and pepper

Method
Saute onion, bacon add sage. Add finely chopped spinach, saute for a couple of minutes, add apple slices, saute for a couple more minutes, season then cool

Cut horizontally through middle of pork to form pouch. Stuff with saute mixture. Combine rub mix and pour over pork, rubbing in well all over the rump. Sit in fridge for at least 3 hours.

Preheat the pven to 170 degrees

Cook for approx 1hr 10min. Flash grill top for a few minutes at end to give good colour. Rest for 10-15min min then carve into slices. Serve with roast potatoes and minted peas
