Beef Salad with Caper Dressing

The dressing in this recipe is nice made with half extra virgin olive oil and pure olive oil.

Ingredients
4 sirloin portion cut steak

Salad
500g cooked warm or cold baby potatoes, halved
100g sugar snap peas, blanched
250g asparagus, blanched

Caper Dressing
½ cup olive oil 
¼ cup red wine vinegar
4 Tbsp finely chopped parsley
4 Tbsp finely chopped spring onion or chives
1-2 Tbsp chopped capers
1-2 Tbsp Dijon mustard
1 tsp minced garlic

Method
Cut the steak in a criss-cross pattern on both sides, but be careful not to cut all the way through. Season with salt, pepper and a little oil.

Heat a frying pan or grill pan to very hot. Sear the meat for 3-4 minutes on all sides. Stand for 2-3 minutes before carving.

In a lidded jar, shake together all the dressing ingredients and season with salt and pepper if wished.

Toss together the potatoes, sugar snap peas and asparagus with the dressing.

Arrange the salad on a plate. Serve the meat on top. Garnish with capers, caperflowers and/or caperberries.
