Baked Meatballs

Ingredients
500g Premium Beef Mince
1 tsp lemon zest
2 large eggs
1 tsp dried oregano
1 large clove garlic, finely chopped
¼ cup grated fat reduced cheese
Freshly ground pepper
2 slices bread, soaked in 100ml reduced fat milk
1 Tbsp olive oil
400g can whole tomatoes in juice
2 tsp dried basil (or 1 cups fresh basil leaves, torn)

Method
Preheat oven to 200°C and spray an 8-cup ovenproof dish with olive oil spray. In a bowl, combine mince, lemon zest, eggs, oregano, garlic and cheese, and season with pepper. Squeeze bread to remove milk, crumble up and combine with mixture.

Shape mince mixture into balls and refrigerate to firm up. Heat oil in a heavy-based frying pan over a medium heat. Brown meatballs on all sides, shaking the pan frequently.

Add tomatoes and cook until sauce slightly thickens. Stir in half the basil. Transfer to a casserole dish and sprinkle with remaining basil. Bake 20 mins, serve with rice or pasta.
